I love the sweet and tangy taste of fresh pickles. I had quite a few cucumbers in my CSA bag this past week so I thought it would be fun to make a few batches of homemade pickles to enjoy on sandwiches or just as a snack in the coming weeks. Did you know that it can be super easy to make your own pickles? It's true! There are all sorts of methods out there but for simple, quick pickles try this.
Slice up your veggies and place in a glass jar. I like to use cucumbers for classic pickles but really you can pickle just about anything. Try root vegetables like radishes and carrots. Place slices veggies in the jar and add a few peppercorns and dill sprigs.
In a bowl combine 1 cup water, 1 cup white vinegar, 2 teaspoons salt and 1 tablespoon sugar. Stir to dissolve. Pour into your veggie filled jar(s). Seal and leave in the refrigerator overnight. These will be ready the next morning and can last up to a month. The longer they set the softer and more... uh... pickled they will get. So if you like a little crisp to your pickle don't wait too long.
It's that easy! These pickles are perfect for sandwiches or snacking. xo. Emma

It's sad to say, but I don't think I have had homemade pickles since I was a kid. Definitely have to try this for my 3 pickle-eatin' kiddos:)

ohhhh I gots to try this! I love pickles of any sort and I always order pickles like this as overpriced appetizers at restaurants. I knew they couldnt be that hard to make....
