A little over two years ago, Elsie and I started working on this cookbook. Our goal was not only to create a beautiful and useful cookbook, we also wanted the book to have a positive impact on anyone who picked it up. Dream big, right? Our book is one part cookbook and one part a healthy eating challenge. We call this challenge Weekday Weekend (hence the name of the book) and the basic premise is you eat well five days a week and then enjoy the weekends. It’s sustainable but still challenging. We worked alongside two registered dietitians, Lindsey and Sarah, to make sure the book was packed with nutritional data along with well-tested recipes. We are incredibly proud of this book. And we cannot wait for you to have a copy!
Here’s what a book looks like during part of the editing process. You get these giant pages in the mail from your publisher to edit as the book comes together. Obviously we had to keep one of our copies because we are sentimental. 🙂
The book will be available in bookstores nationwide on November 7. Here’s a little peek at a few of the recipes in the cookbook. Over half the book is dedicated to weekday-friendly recipes, meaning they are on the healthy side and geared toward fueling your body. Also, our cookbook is vegetarian and mostly plant-based. But we also have plenty of recipes that are for you to enjoy on the weekends: there’s cookies, brownies, and plenty of cocktails!
We will be hosting a four-week Weekday Weekend challenge on our Instagram starting January 1, so if you’re interested in participating in that and you want to use the cookbook, be sure to get your copy before then. Our cookbook also makes a great gift for anyone who loves a mix of healthy and indulgent dishes, as the instructions are simple enough that anyone can cook from it.
