3 Super Healthy Salads

Asparagus Salad Asparagus Salad Hi friends! I'm back on a huge salad kick! I think it's the sunny weather, but I seriously can't get enough. Here are three simple salads that I am enjoying right now!

This first salad is 1 bunch raw asparagus (you could steam it, but I like it raw) chopped into tiny pieces, 1 avocado chopped, 1 tomato chopped, 1/4 cup peas and 3 tablespoons mayo mixed in with some garlic and herb seasoning. This salad is so yummy, super fresh and healthy! I was inspired to try this from a salad I had at Workshop in Palm Springs. 🙂Kale, Pea + Blue Cheese SaladKale, Pea + Blue Cheese SaladThis next salad is kale, blue cheese dressing, peas, sliced tomato and blue cheese crumbles. So good!

Sushi Salad with KaleSushi Salad with KaleI've also been making a kale and broccoli version of my spicy sushi salad. I've been adding cabbage and wasabi mayo and sriracha. It's so good and perfect for lunch!

Do you have any go-to salads? I'd love to try your recipes too! xo. Elsie

  • The first one seems so yummy! Gonna try it! 🙂

  • I LOVE salads – just pinned this blog! I love romaine with quinoa, feta, tomatoes, cucumbers, candied pecans and a honey-mustard dressing. Mmm! I’ve also been eating one at a restaurant lately that has butter lettuce, tomatoes, peas, mint, feta and radishes <~ phenomenal! xox Bailey http://akabailey.blogspot.com

  • The kale with blue cheese sounds incredible! I love salads at the moment, can’t get enough of them in this heat.

  • try green asparagus, tomato, artichoke hearts and lot’s of grated manchego cheese with a vinaigrette of red wine and red balsamico vinegar.

  • These are SOOO incredibly wonderful!
cant wait to try the last one:)

  • These look super good! Are there any substitutes for the mayo in the first salad?

  • Yum! Love all three salads Elsie…def going to try them, and add them into my repertoire this Summer!

  • I sushi salad sounds wonderful! I love all salads. Having a gluten allergy, salads are usually one of my only options when I go out so I’ve learned to love ALL salads!

    <3 Sara

  • Thanks for sharing these! Always on the look out for a healthy yet delish menu option 🙂

  • How do you cook your kale when you make a salad?Rx

  • I’m on a healthy eating kick right now and I just might try out some of those recipes. The salads look delicious!

  • My favorite “special” salad is a scandic version of the ceasar salad! It includes romano leafs, cold-smoked salmon (or gravlax), homemade rye-bread croutons and a lemon-mayo-dressing with dill. Cheese is optional (the boyfriend likes edam cheese, i like mine without cheese).

Greetings from Finland, love your blog!

  • This looks incredible. I’ve been making a ton of salads too — I’ve been really into escarole lately. Also, mixing tunafish with one mashed up avocado — tastes just like tunafish with mayo…. but presumably healthier. That’s what I tell myself, anyway.

  • These look so yummy!

My favorite salad lately is a super easy cold salad: grated carrots and small slices of red onion. I pour on hot oil with sautéed garlic, caraway seeds, paprika and a touch of cumin. Then sprinkle in some mint and parsley (then pop in the fridge until cold and flavors blend) and top with feta!

    Cold, crunchy, creamy and perfect!

  • going to try out the second salad! love my tomatoes.

    – Janine

  • This looks so good, I’m gonna try all 3!

  • Looks so good! I’m also very into salads at the moment (although it isn’t summery at all in Holland). My favorite salad is salad with lentils, beetroot, avocado, walnuts and parmesan chuncks and herbs. You can find the recipe on my blog: http://yellowlemontreeblog.blogspot.nl/2013/04/linzen-bietensalade-met-walnoten.html

  • I’ll definitely give the first one a go! I like easy salad recipes which are more exciting than the usual lettuce, cucumber and tomato! x

  • My favourite salad is lettuce, avocardo, peas and prawns (or some other shellfish)

It doesn’t sound exciting but all four ingrediants go really well together.

  • Yummy! I do want to try some kale salads.

    xo Jennifer

  • I made this super healthy/delicious salad the other day out of things I just had in the kitchen already…

Swiss chard, stems and leaves chopped
    Crumbled goat cheese
    Canned Tuna fish (1 can)
Homemade Dijon vinaigrette (1 TB dijon mustard, 1 TB apple cider vinegar, s&p, whisked together with some olive oil)

    Delicious and easy!

  • Yumm, delicious I love the sound of these!

  • Yum, I love salads too! These look like ‘must tries’. I’ve never had a kale salad but now I’m curious.

I make a quinoa salad that I think you’ll like, and also a black bean and rice salad that is delicious. And if you’re still interested in more, I make what I think is the best pasta salad ever! All the recipes are on my blog but I don’t want to bog your comment section down with a bunch of links so if you’d like to try any of them you can find them in the ‘Salads and Dressings’ category. (The list of categories is at the bottom of the page.)

  • Yum!! The best salads I’ve made are always just super simple/classic but my secret is caramalised balsamic vinegar…seriously incredible. And super versatile – goes really well over strawberries for dessert and amazing when you just cover chicken or pork with it and roast. A brand I use in Australia is Pukara Estate from the Hunter Valley. Thanks for sharing your salad recipes girls! xx

  • The last salad is totally up my alley! Asian style! 🙂 Thanks for these recipes, I’m totally going to try them out!

  • I need to try these! Especially the ones with kale. I get mine fresh from my garden. 🙂

  • For the top salad, how would you cook the peas? Steam or fresh?

  • Oh wow, those salads look delicious. Sadly the weather in the UK hasn’t been too encouraging for salad eating recently. On one day the sun did shine, I tried out a recipe using watermelon, avocado and prawns with onion, garlic etc, and some rice vinegar. It was REALLY tasty. Fingers crossed for another sunny day to get to eat it again! And I definitely want to try out your recipes too.

  • Oh. The asparagus salad looks amazing! I love your combinations! It’s important to keep salads fun and creative! Thanks for sharing!

  • I’ve been collecting salad recipes! Might have to add yours! http://pinterest.com/saireybearey/salad-days/

  • I’m a massive salad fan especially these days when its often too hot at lunch time to contemplate turning on the oven – the asparagus salad looks divine

  • I’m going to be making my grandma’s broccoli salad soon – I’m still amazed at how ingredients that don’t sound like they go together at all make such a good salad! (broccoli, golden raisins, sunflower seeds, crispy bacon, and the dressing)

  • That first asparagus salad looks so good! Gonna try it 🙂

I love salads when the weather is hot, as it usually is here in Austin! I have a recipe for an Israeli Couscous salad that I think you would like, as well as some super tasty candied pecans that go really well on spinach salads with gorgonzola & red onion.

  • Yum! I’m a salad lover and just pinned all three of these. 🙂

  • healthy and yummy. perfect combo!

  • These look and sound so delicious! xx

  • I am totally on a never ending food kick for like.. life. But these variations look fun and delicious!

  • summer time means salad time. that sushi inspired salad is at the top of my to-do!

  • Mmm they look good. My favourite is grated carrot and beetroot dressed with olive oil, lemon and orange juice a pinch of cayenne pepper and a dash of honey, deelish!

  • These all look AMAZING! One thing though – it seems a little odd to call something with blue cheese dressing or multiple tablespoons of mayo “super healthy”!! Haha. They certainly look delicious, though!!

Do you have a Whole Foods near you? They carry a great variety of “no oil” dressings (found in the refrigerated section) that are really just purees (you could totally make them at home, but their display case is good for inspiration). They have a few such as fig balsamic, carrot ginger, and sweet onion with rosemary, all with no fat and minimal sugar. The pureed veggies and herbs make a great dressing with no artificial or processed ingredients that you can feel good about slathering on your salad!

Maybe you can write some DIYs on this topic? I have a bunch of whole food DIY salad dressing recipes that I love, and I’m sure you girls could come up with a bunch as well!

  • Mmmm- the asparagus salad looks SO good! I will have to give it a try. I’ve been eating my favorite spinach, avocado, corn, garbanzo beans, cherry tomatoes, olives and LOTS of croutons with my fave balsamic vinaigrette dressing. I’ve been stuck in a rut- thanks for the suggestion!

  • Awesome! Salads are so great in the summer. The top one looks awesome.
My FAVORITE salad right now is a watercress, hearts of palm, avocado and pine nut salad. It’s sooo good and easy!

  • I love this salad, mostly because of the tahini-maple dressing:

  • So many yummy salad ideas!!

    Lulu xx

  • Thank you, thank you, thank you for the asparagus salad. Yum!

  • I’ve been putting mango and Navy beans into all my salads lately, and I top them all off with feta or goat cheese and some sunflower seeds! (I love pine nuts, but they’re just so expensive!)

  • My go to salad is red leaf lettuce, dried cranberries, sliced almonds, apple, fresh mozzarella and poppyseed dressing. Yum!

  • I’d say you’re on pea kick, too, lol!
I made my first kale salad last week and really enjoyed it, I put blueberries, mango and tomato on it with lemon and olive oil. I love any salad with mango and avocado, that’s my go, esp. with hearts of palm.
    Keep the salad ideas comin’!

  • This looks so yummy!!! http://hiddenbaby.myshopify.com/blogs/baby-blog

  • I was just wondering how to use asparagus which appeared in shops not so long ago, thanks for your ideas!
How do you do blue cheese dressing? I’ve never tried it before.

  • Yum! What kind of herbs went in the dressing for the asparagus salad?

  • Yum! I love salad
my favourite is rocket and spinach with either grilled peppers and tomatoes or avocado, mozzarella and warm mushrooms
either of these I could eat every day

  • Salad number one looks delicious! I’ve recently discovered avocado and LOVE it.

My favourite salad is anything with feta cheese and red onion in it. Try and buy feta in jars of oil with olives – I use a little of the oil as a dressing, I think it’s much healthier than mayonnaise. 🙂

  • I have just found your blog and i love it!
    i would follow you two, but i can’f find the follow-button 🙁

i am really happy if you answer me!
    Love, Lexa

  • That second salad looks amazingly delicious!! I often feel uninspired when it comes to kale but this looks yummy

  • Fabulous recipes! I love salads in the summer, but plain old lettuce can get so boring! I’m partial to a taco salad myself, with lots of salsa and cheese 🙂

  • Holy moly that first salad looks yummy. I’ll have to give it a try before asparagus season is up!

  • yum yum! I suggest trying a legit Greek salad (NO lettuce- just tomatoes, cucumbers, onion, sweet peppers olives, feta cheese and oregano all mixed with oil and vinegar. Perfection!) My boy friend has this thing for toasted walnuts and sweet corn in his salad, and I will never complain about that 🙂

  • They all look delicious! Thanks for sharing!

  • oo that first salad sounds amazing, especially the garlicky herb mayo dressing! I’ve never tried raw asparagus, will have to give it a go 🙂

    Katie x
