(Flourless) Red Wine Chocolate Cake

Easy strawberry topping recipeI'm trying to remember when flourless cake was a big trend. It was pretty recent, maybe just the past couple of years. Not that I always know when the food trends are happening. I am a chronic behind-the-latest-trend-by-at-least-six-months kind of gal. I keep thinking chocolate lava cakes are gonna make a come back. I bought truffle oil too late in the game. I would make a joke about bacon here, but I'm pretty sure that's not a trend anymore. That's a trend gone classic. Bacon.

This particular flourless chocolate cake is really minimal. It's mostly chocolate. So I like to add fruit. And sometimes, if appropriate, jam hearts. 🙂No bake chocolate cakeFlourless Red Wine Chocolate Cake, makes 4-6 ramekins or a mini loaf pan

8 oz. dark chocolate
6 ounces heavy whipping cream
2 ounces red wine (fruity is good)
1/4 teaspoon salt

In a double boiler, glass bowl over a pan, or in the microwave melt the dark chocolate. Whisk in the cream, wine and salt. Stir until well combined. Pour into your prepared vessel(s) and freeze overnight.Flourless chocolate cakeAs you can see in the above photos I lined my ramekins with wax paper before pouring in the batter. Then I was able to gently remove the cakes from the ramekins. These will freeze soft and are still very easy to cut into. I served mine with a few minced strawberries with a little sugar. xo. Emma

  • Just had a piece of flourless chocolate cake at one of my favorite local eateries. And o my goodness, for a gal who doesn’t love cake it’s PERFECTION.

  • This looks yummy! I love chocolate but hate the cake-texture that so many chocolate cakes have. This looks super fudgy. mmm.

  • Hmm.. sounds like chocolate mousse to me! 😉 I’m gluten intolerant, so when I see recipes like this I just giggle. But it does look so cute. Hope that doesn’t sound too cynical, Thanks for making this! It’s nice to see that you’re making the effort to make more GF recipes. I need to be better at documenting my creations.

  • mmm looks delish and so super simple! will try this on the weekend coming thanks for the recipe! xx. gigi. food and beauty blogger @ www.gigikkitchen.blogspot.com

  • This is great! I eat a gluten free, grain free diet with only
Natural sugars so i am always excited to find
New treats that i can enjoy. Do you think coconut
Milk would work instead of the cream?

  • Looks great, but aren’t flourless cakes usually baked? http://allrecipes.com/recipe/flourless-chocolate-cake-ii/
    This is more like pudding/ice-cream…

  • I didn’t even know it was a trend 🙂 Anything with chocolate is always ok with me.

  • Ooo, that looks so yummy and I like the combination with vine. I really try to do it. Perfect for Valentines day. Have a nice day.

  • Strawberry is one of my favorite one and I’d love to make this for my upcoming next month b’day. Thanks for sharing such a delicious cake recipe.

  • I made a similar one like that once. Almost ate the whole cake and then I got sooo sick but it tasted wonderful 🙂

  • That looks de-lish! Want to try this sometime since my friends keep telling me I eat too much cake!

  • Personally, I love lava cakes, so it would be awesome if they trended again. Recently, they were taken off the menu of the only place in my city where I could still order them. I was quite disappointed!

I’ve actually never heard of flourless cakes, so I’m even more behind than you. Sounds awesome!

  • Thank you for sharing this awesome recipe! I’m always on the look out for gfree treats, keep ’em coming!

  • Did you just use the word vessel? That made me smile. And, this looks delicious. Wonderful ideas, as always!

ps. The other night, I was out shopping at, wait for it, Target (someday, when you have little ones, going to Target will be a big, big deal for you too. Laugh, but I promise you!) and came home to fresh brownies made by my husband. He told me how he carefully put wax paper in before pouring in the batter and baking the brownies and how he felt so professional. . . only to panic when he realized wax paper is not parchment paper. He managed to get it out with a quick swipe and didn’t lose much of the brownie batter in the process. Which was a very good thing– they were Trader Joe’s blondie brownies. Extra yum. (Those parchment + wax papers can be so tricky sometimes!)

  • Flourless chocolate cake usually has eggs and butter in it. Like this classic MS recipe: http://www.marthastewart.com/344293/flourless-chocolate-cake

Seems more appropriate to call it a chocolate cream.

  • Mmmm, sounds so good. I’m never tried a flourless cake, but it seems like the consistency of fudge maybe? I don’t know, I might try it though.
