Quinoa Fajita Salad

Quinoa Fajita Salad RecipeLately, I've been craving spicy food. Maybe it's the weather, but I've been in the mood for summer flavors. Guacamole tops my list for yummy, summer food. But since it's maybe not such a good idea to eat nothing but guacamole, I've created this little fajita salad to cure the craving.Cilantro + Tomato + Green OnionStart with a bed of mixed greens. Add a layer of chopped tomato, cilantro and green onion to the top. I tend to go a little crazy with cilantro because I love it so much.

Next, add 1/2 cup cooked quinoa, seasoned with garlic powder and fresh lime juice.Mole Poblano SpiceCook bell peppers and any protein you like (I used chicken and shrimp) on the stovetop with a little bit of oil. • Sounds great!!

Start with a bed of mixed greens. Add a layer of chopped tomato, cilantro and green onion to the top. I tend to go a little crazy with cilantro because I love it so much.

Next, add 1/2 cup cooked quinoa, seasoned with garlic powder and fresh lime juice.

Cook bell peppers and any protein you like (I used chicken and shrimp) on the stovetop with a little bit of oil. Season with your favorite spices, or a fajita seasoning mixture.

Next, add the cooked peppers and protein to the top of the salad. Garnish with fresh avocado, guacamole or a little sour cream.

Serve with your favorite dressing and enjoy!

  • There’s nothing about this I don’t like. Except maybe the thought of washing the dishes afterward…

  • I am so happy to see that you are using spices from Oaktown Spice Shop. I live near there and it is such an awesome little shop with such helpful staff. I highly recommend anyone in the Oakland area make a trip over to this awesome shop!

  • I love that you get your spices from oaktown spiceshop! It’s right down the street from my house and it is such a cute little shop.

  • This sounds so delicious. There’s something about quinoa and shrimp that goes together perfectly. Both are feel light and refreshing, yet filling enough for a dinner entree. I like to add shrimp to quinoa with steamed kale and goat cheese:
