Ricotta and Raspberry Pie

Ricotta raspberry pieThis is a fun variation on cheesecake. Sort of. I mean… it's a pie. Not a cake. And it's less sweet than cheesecake. So there's that too. You can add any kind of berries or fruit that you have to the top. We decided to go with raspberries!

Needed: pie crust (make one or buy one, I cheated and bought one), 10 ounces ricotta cheese, two eggs, 1 tablespoon brown sugar, 1 tablespoon white sugar, a pinch of salt and 2-3 handfuls of fresh raspberries.

Preheat the oven to 375 F and bake the pie crust for 8 minutes.

Mix together the cheese, eggs, sugars and salt. Pour into the partially baked pie crust. Add berries to the top. Bake for 40-42 minutes until set. Allow to cool before serving.

  • I made this pie for a party this weekend. It came out very well, and our guests loved it. The recipe did not fill a standard 9 in. pie plate, so I put in added an extra 1/2 of what the recipe called for and that worked out perfectly (it really doesn’t rise much if at all). I also added a bit extra sugar, about a teaspoon of vanilla, and a pinch of cinnamon, to make it a little more sweet and desserty. This dish is so versatile – you could add so many different things. I plan to try it with different fruits, chocolate chips, cardamom, or veggies.

  • i just made this and it is absolutely delicious! thank you so much for the recipe! 🙂

  • Just made this on Saturday for my mom’s birthday brunch! (Because brunch seems to call for something a little less fluffy than cakes, doesn’t it?) It was perfect. Light and fresh and covered in raspberries!!! Can’t get better in my book.

  • Made this today and it is as delicious as it is easy to make! Thanks for the recipe. It’s going to be a favorite of mine now…

  • I just tried this recipe. It was so easy, and my whole family loved it. Thanks for posting it!

  • Do you need to cover the top to avoid scorching the berries? Yours looks so nice, but I’m concerned about over-baking it/drying out berries. Thanks so much! Love the idea of ricotta for a pie!

  • I’ve made cheesecake very similar to this only without the pie crust, I usually add some flavouring to the ricotta though like ginger or orange peel.
I think I’ll try it like this though next time
