Ricotta and Raspberry Pie

Ricotta raspberry pieThis is a fun variation on cheesecake. Sort of. I mean… it's a pie. Not a cake. And it's less sweet than cheesecake. So there's that too. You can add any kind of berries or fruit that you have to the top. We decided to go with raspberries!

Needed: pie crust (make one or buy one, I cheated and bought one), 10 ounces ricotta cheese, two eggs, 1 tablespoon brown sugar, 1 tablespoon white sugar, a pinch of salt and 2-3 handfuls of fresh raspberries.

Preheat the oven to 375 F and bake the pie crust for 8 minutes.

Mix together the cheese, eggs, sugars and salt. Pour into the partially baked pie crust. Add berries to the top. Bake for 40-42 minutes until set. Allow to cool before serving.

  • I made this pie for a party this weekend. It came out very well, and our guests loved it. The recipe did not fill a standard 9 in. pie plate, so I put in added an extra 1/2 of what the recipe called for and that worked out perfectly (it really doesn’t rise much if at all). I also added a bit extra sugar, about a teaspoon of vanilla, and a pinch of cinnamon, to make it a little more sweet and desserty. This dish is so versatile – you could add so many different things. I plan to try it with different fruits, chocolate chips, cardamom, or veggies.

  • I’ve made cheesecake very similar to this only without the pie crust, I usually add some flavouring to the ricotta though like ginger or orange peel.
    I think I’ll try it like this though next time
