Ingredients

  • 2 cups water
  • 1 cup granulated sugar
  • 1 cup pineapple chopped
  • 3 tablespoons passionfruit powder
  • ½ tablespoon green coffee extract optional
  • ½ tablespoon citric acid
  • ½ cup coconut milk sweetened
  • ¼ cup freeze dried pineapple crumbled
  • cup ice

Instructions

For the Base:

  • Begin by making the pineapple base syrup. To make this syrup, combine in a sauce pan the water, granulated sugar, and chopped fresh pineapple. Once it has reached the boiling point, lower the heat and continue to simmer for about 10 minutes.
  • Remove from the heat and strain the pineapple chunks out. Add passionfruit powder, green coffee extract powder, and citric acid powder while still warm.
  • Once cooled, decant the syrup into a glass container to store in the fridge. This is the base syrup you will need to create the Paradise Drink Recipe.

For the Drink:

  • To make a Paradise Drink, combine the pineapple base syrup (above) with coconut milk and serve over ice. Garnish the top with dried pineapple pieces, crumbled up.

Notes

  • To create a caffeine-free version omit the green coffee extract.
  • To create a quicker version of this drink you can replace the homemade syrup with store bought pineapple juice. It’s not as creamy, but still refreshing.
  • You can substitute the citric acid for a tablespoon of fresh lemon juice if you prefer.
  • If this drink is too sweet for you, try using a lower ratio of syrup and a larger ratio of coconut milk and ice.
  • You can replace the coconut milk with cold water to make the Pineapple Passionfruit Refresher. It’s less of a rich and creamy drink and more refreshing and light.
