Begin by making the pineapple base syrup. To make this syrup, combine in a sauce pan the water, granulated sugar, and chopped fresh pineapple. Once it has reached the boiling point, lower the heat and continue to simmer for about 10 minutes.
Remove from the heat and strain the pineapple chunks out. Add passionfruit powder, green coffee extract powder, and citric acid powder while still warm.
Once cooled, decant the syrup into a glass container to store in the fridge. This is the base syrup you will need to create the Paradise Drink Recipe.
For the Drink:
To make a Paradise Drink, combine the pineapple base syrup (above) with coconut milk and serve over ice. Garnish the top with dried pineapple pieces, crumbled up.
Notes
To create a caffeine-free version omit the green coffee extract.
To create a quicker version of this drink you can replace the homemade syrup with store bought pineapple juice. It’s not as creamy, but still refreshing.
You can substitute the citric acid for a tablespoon of fresh lemon juice if you prefer.
If this drink is too sweet for you, try using a lower ratio of syrup and a larger ratio of coconut milk and ice.
You can replace the coconut milk with cold water to make the Pineapple Passionfruit Refresher. It’s less of a rich and creamy drink and more refreshing and light.
