Begin by making a batch of simple syrup, which is made by simmering equal parts sugar and water. Heat until the liquid is clear and there are no more sugar grains.
In a blender, blend fresh watermelon pieces and lemon juice together. Use a fine mesh strainer to remove the pulp.
In a pitcher, mix the simple syrup, lemon/watermelon juice and water.
Serve with ice and a lemon slice. Enjoy!!
Notes
One cup of watermelon makes a super pigmented pink color like my photos show. If you want a pastel pink, try using half a cup of watermelon.
For more lemon flavor, grate some lemon zest into your pitcher.
Store without ice and add ice only when serving for the best flavor.
