In a small bowl or jar combine the chia seeds, milk and vanilla extract.
Give it a good stir and refrigerate for at least one hour.
After the first thirty minutes give the mixture a stir, so it doesn’t clump together.
Once you’re ready to eat, stir in the sweetener and top with your favorite fruit or chopped nuts.
Notes
You can use any kind of milk you prefer but I like to use almond or oat milk.For the sweetener honey, maple syrup and agave all work well. To make this chocolate simply add 1 tablespoon of cocoa to the ingredients before refrigerating.To get that ultra-creamy pudding-like texture, let it set up in the fridge overnight.
