Thai Tea Frappe

Ingredients

  • 4 teaspoons Thai iced tea mix if you have one, check your local Thai food market for a similar mix
  • tea sock or tea strainer
  • 1 cup water
  • 1 splash half & half
  • 4 teaspoons sugar
  • 1 scoop vanilla ice cream
  • 6-7 ice cubes
  • whipped cream

Instructions

  • First, bring your filtered water to a boil. Add your Thai tea mix to a tea sock (or directly to the water if you have a tea strainer), pour your hot water through the sock, and allow the tea to steep for at least 5 minutes. I doubled the strength of the tea, so if you're using a different brand of tea mix, just make sure to double the amount of tea for one cup of water. Be careful not to spill the tea or touch the concentrate or wet tea leaves with your bare hands. It's a really bright orange and will totally stain your hands or clothing if you're not careful!
  • While your tea mix is still hot, add your sugar into the tea and stir to dissolve the sugar. Allow the tea to cool and pour the tea into a blender, and add the cream, ice cream, and ice cubes to the blender. If you were thinking ahead, you could also make a batch of tea at regular strength and pour it into ice cube trays for your ice. This would add more intensity to the Thai tea flavor as the drink melts.
  • Mix until combined and the ice is broken into very small pieces. Adjust the ingredient amounts if needed and blend just to combine. Pour into a glass and garnish with whipped cream (or some beautiful star anise).
