Overnight Baked Apple Oatmeal

Ingredients

  • 1 ¾ oats
  • cup brown sugar
  • ½ cup chopped nuts pecans, walnuts, etc.
  • 1 teaspoon baking powder
  • teaspoon salt
  • 1 teaspoon cinnamon
  • cups milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter melted
  • 2 apples

Instructions

  • In a large mixing bowl, stir together the oats, sugar, nuts, baking powder, salt, and cinnamon. Finely slice or chop up the apples (removing the core, seeds, and stem) and set aside.
  • In a small mixing bowl, whisk together the milk, egg, vanilla extract, and melted but slightly cooled butter. Pour this mixture into the larger mixing bowl and stir to combine. Then stir in half the apples.
  • In a pie pan, or divided among four single serving baking dishes, add the remaining apple pieces on the bottom. Then pour the oat mixture over the top. You can bake immediately or cover and refrigerate overnight.
  • Bake at 350°F for 30 minutes. Allow to slightly cool before eating. Top with cream, milk, maple syrup or nothing at all.

Notes

If you bake in individual servings, after baking simply store covered in the refrigerator and rewarm in the oven or microwave to enjoy throughout the week.
