Easy Vodka Sauce - 6 Ingredients

Ingredients

  • ½ onion yellow
  • 5 cloves garlic
  • 1 tablespoon olive oil
  • 28 ounces stewed whole tomatoes 1 can
  • 6 ounces tomato paste 1 can
  • ¼ cup vodka
  • 1 cup whipping cream heavy
  • teaspoon cayenne optional
  • salt and pepper to taste

Instructions

  • Chop up the onion and mince the garlic.
  • In a large saucepan, heat the olive oil over medium heat.
  • Cook the onions and garlic until soft for about 2-3 minutes.
  • Add the stewed tomatoes, tomato paste, and vodka.
  • Cook for 5-6 minutes.
  • Using an immersion blender or transferring to a blender, puree the mixture until smooth.
  • Season with cayenne if using and a little salt and pepper.
  • Continue to cook for another 10 minutes.
  • Stir in the cream and cook for another few minutes so everything gets hot.
  • Taste and add more salt and pepper if needed.
  • Serve over 32 ounces of cooked pasta. See notes for storage.

If you do not need to use all of this sauce at one time, you can store half in the refrigerator for up to 3-5 days, or you can store it longer in the freezer.
