Breakfast is for sure my favorite meal of the day! The only problem is, we don’t make it at home enough. One of my mini-goals for this coming season is to cook breakfast and lunch at home. If I were to give this little goal of mine a name it would be be “beyond toast” or maybe “sometimes toast but not every time”? Basically I just need to DO it. So today I did do it. I was obsessed and feeling pretty high on breakfast happiness. Here’s what I made:
Before we get into tacos, I have to tell you that ginger in juice is one of the best things I’ve been making this year! I usually make ginger and green apple juice, but one day I tried ginger-orange, and it was incredible. All you need is three oranges per glass and a small piece of ginger (the size or your thumb for a mild flavor and double that for a super gingery, knock-your-socks-off type experience). If you have a juicer at home, just throw it all in and enjoy! If you don’t have a juicer you can juice the oranges by hand and then shake them with small slices of ginger (martini style) to infuse the flavor. You’re gonna love it!
Breakfast tacos weren’t always my jam. They can be greasy and gross, but when you make them at home they’re a whole different animal. I fried two diced potatoes with a little onion and garlic, made a batch or fresh pico, some guacamole, chorizo and some scrambled eggs with parmesan cheese. It’s that easy!

Any breakfast that includes avocado gets my vote! Orange and ginger juice is so great for getting a real hit if vitamin c and something cars when I’m feeling run down.

As I like my sleep more than my breakfast, I rather choose sleeping 20 min more instead of making a great breakfast. But maybe I should give up this habbit. We have to keep in mind one thing – breakfast is the most important meal of the day.

Yes to the ginger in juice!! I was in Jamaica this summer, and ALLL of their juices had some ginger in it. Gave a really great punch, and I even think it helped with my digestion! haha.
Love orange and ginger juice, throw a few carrots in your juicer with it, great beta carotene boost to start your day and adds a pleasant sweetness. PLUS it turns out neon orange which is just amazingly great.

Its still a culture shock to me when people flip out over tacos for breakfast. Being Mexican and all, it doesn’t seem so weird, my parents used to make them every saturday and sunday mornings (after church) and we’d have either eggs and potatos, chorizo and eggs, Barbacoa and Queso Fresco (GO TO A MEXICAN MARKET AND GET IT). Its just so funny when I get that culture shock from myself and people everynow and then!
Tacos are actually poor person’s meal back in the olden times of Mexico. You could make a tortilla and chop up some beef and beans and there you go a full meal! They’re also a portable meal as well! Wrap it up in foil and put it in your lunch kit and there ya go!
Yum! I had chorizo con huevos for dinner last week! Sometimes, breakfast for dinner hits the spot.
