Gingerbread Granola

Gingerbread granola Gingerbread granola I didn't make a gingerbread house this year. I don't usually. It's not a tradition for me. I just think they are SO cute when I see other's creations. So, I think in the back of my mind every year I half plan to do one.

But I'll tell you what I did do: make gingerbread granola. I love greek yogurt with a little  honey and granola for breakfast all year long. Swapping out my usual granola for a gingerbread flavor just makes my morning routine feel a little more festive. And I love that. πŸ™‚Gingerbread spiceGingerbread Granola, makes 3 cups

2 cups oats
1 cup almond slivers
1/3 cup olive oil
1/3 cup maple syrup
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon cloves

In a bowl combine the oats and almonds. Pour over the olive oil and maple syrup. Mix well so all the pieces get coated. I like to combine all the spices and salt in a small bowl or cup. Evenly sprinkle the spices over the mixture, stir so everything gets mixed well. How to make gingerbread granolaOptional: press the granola into a gingerbread man cookie cutter. Or you can just spread the mixture in a thin layer onto a cookie sheet covered with parchment paper or a silpat mat. Bake at 350Β°F for 15-18 minutes. Gingerbread granolaThe little gingerbread man granola will be quite fragile, but they are so cute sticking out of your morning yogurt (or bowl or milk, whatever). Try this. Make your morning routine festive! xo. Emma
