I’m still obsessed with my bubble waffle maker! Today I thought I’d share a chocolate bubble waffle recipe with you all. Keep in mind that you can also use this same batter in a Belgian waffle maker. But whatever you do, be sure to fill (or top) these with sliced banana and Nutella.
But if you’re not feeling the Nutella, I also highly recommend bananas and peanut butter. Really, anything that goes well with chocolate goes well with these waffles. If you are making bubble waffles, I recommend folding them into a taco shape before filling as it makes it easier to eat.
Chocolate Bubble Waffles, makes 3-4.
3/4 cup cake flour
1/3 cup sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cocoa
1/3 cup milk
3 eggs, yolks and whites separated
1/2 teaspoon vanilla extract
3 tablespoons melted butter
bananas and Nutella for serving
In a bowl combine the cake flour, sugar, baking powder, salt, and cocoa. Whisk to combine and remove any lumps from the cake flower and cocoa, which tend to clump. Stir in the milk, egg yolks, vanilla extract and melted (but cooled) butter.
In an electric mixer beat the egg whites until very foamy/frothy. Gently fold the egg whites into the thick batter until just combined.
Follow your waffle iron manufacturer’s directions to cook the batter. If you’re making bubble waffles that you plan to fold and fill, I recommend draping cooked waffles over a glass just after they come out of the iron, like in the photo above. This helps them not crack when you’re ready to fold them later.
Slice up a banana, drizzle on the chocolate spread, and serve these warm with a tall glass of milk. Enjoy! xo. Emma

Oh these are so so fun! I have one of these bubble waffle makers and we use them to make “Hong Kong Cakes”. We tear them apart into individual waffles and my kids adore them. I love your idea of keeping them together and eating them taco style!
These are one of my favourite snacks when I’m in Hong Kong. They’re also known as ‘egg puffs’ and ‘eggettes’. They’re really good with chocolate chips thrown in the batter too!
Another reason for letting them cool before wrapping them is that they’ll be crispier. Most good places that make these in Hong Kong succeed because they have good batter and crispy bubble waffles!
I love eggettes or puffles! They are crispy on the outside and slightly chewing on the inside. I never thought of treating it like a crepe, this is such an innovative twist! Thank you for sharing!

When I was young, we lived in Asia and these were sold at malls everywhere, except filled with a coconutty custard. My mum would have a bag of of them waiting for me sometimes when I got home from school- SO GOOD!

Nooo don’t fold it up!! You’re supposed to break off the bubbles and eat them individually – that’s how you get to fully appreciate the crunching of the shell and the soft fluffy insides. This is how we do it in Hong Kong and believe me we know our bubble waffles 🙂
