Easy Homemade Pickles

Easy Homemade Pickles Recipe I love the sweet and tangy taste of fresh pickles. I had quite a few cucumbers in my CSA bag this past week so I thought it would be fun to make a few batches of homemade pickles to enjoy on sandwiches or just as a snack in the coming weeks. Did you know that it can be super easy to make your own pickles? It's true! There are all sorts of methods out there but for simple, quick pickles try this.

Easy Homemade PicklesSlice up your veggies and place in a glass jar. I like to use cucumbers for classic pickles but really you can pickle just about anything. Try root vegetables like radishes and carrots. Place slices veggies in the jar and add a few peppercorns and dill sprigs.

Homemade Pickled Radish + CarrotHomemade Pickled Radish + CarrotIn a bowl combine 1 cup water, 1 cup white vinegar, 2 teaspoons salt and 1 tablespoon sugar. Stir to dissolve. Pour into your veggie filled jar(s). Seal and leave in the refrigerator overnight. These will be ready the next morning and can last up to a month. The longer they set the softer and more… uh… pickled they will get. So if you like a little crisp to your pickle don't wait too long.

Pickles Pickles It's that easy! These pickles are perfect for sandwiches or snacking. xo. Emma

  • Dear Elsie and Emma, I loooove your blog!! Emma, this is the best pickle recipe ever – I made them last night and by today at lunch they were ready to go! Delicious! I posted the results on my yoga blog, Kali’s Kitchen: http://yoga-tara.blogspot.ca/2012/06/quick-and-easy-homemade-pickles.html and linked to you with love. P.S. My Mom is now totally addicted to your blog too – Thank you so much for for all your generosity and inspiration! Namaste!

  • We used to make pickles all the time.
I love pickles. I could eat them all day every day.

  • These look great, definately going to have a go. I wonder how courgettes would pickle, i always get more than I can eat!

  • Wow, I was just wondering about easy refrigerator pickle methods…my garden is producing cucumbers quicker than I can eat them 🙂 This looks like the perfect way to try a lot of different flavor combos. Gotta try some sliced jalapeños in there.

  • Thanks for this easy-peasy recipe, Emma! I think I’m going to make some pickle magic happen this evening! Also? I can’t wait to try pickled carrots!! Yum 🙂

  • you really can pickle just about anything. my grandma’s favorite was watermelon rind. what the frugal.

  • My grandma pickles cucumbers and cans lots of veggies. She uses a pressure cooker though so they last a really long time until you open them. She tells me the story of how one day she was canning green beans and the pressure cooker blew a gasket. She was in the next room and heard an explosion. It just cracks me up to hear her say, “And there were beans EVERYWHERE!” lol it was good she wasn’t in the room too because boiling bran explosions are probably dangerous!

  • This looks really amazing. I can’t wait to try this! I’ve already been on the hint for mason jars, now I have something to do with them!

  • these are so gorgeous and would make beautiful homemade gifs too. Thanks for the tip.

  • Wow i thought it would be much harder to make pickles. This is much easier than I expected I need to try thanks love

  • Thank you so much for sharing this, I was just on the hunt to find a recipe! But I’m wanting to pickle peppers, which I think this will do well too.

  • Great idea, definitly going to try this!

  • Yum – I have never tried that … but willl be for sure … I’m thinking great family xmas presies …

  • Love this, thanks for sharing! I´ve harvested my 1 bunch of white radishes today and just until 1 minute ago I wasn´t sure what do do with them 🙂

  • My favourite is a controversial one – Pickled Eggs. I am addicted. My Mum makes me a huge jar full of them at Christmas time. Yum… xxxx

  • Wow! it seems so easy! I’m going to try it this weekend.
Question: Do you have to do anything special to “seal” the jars or is it just as simple as putting the lid on?

  • Too pretty for eating.Rx

  • Yummy! I love pickles, but I’ve never made them homemade. I bet they’re great.

  • Done. I can’t wait to crack into these tomorrow. I adore a real crunchy pickle. I added a few red pepper flakes to one batch. I hope it turns out well…and doesn’t completely set my mouth on fire. Fingers crossed.
Also, I’m totally inspired to find a CSA box provider for my home. The Hubs and I need more intentional instead of accidental eating.

  • Love pickles! Must try this out some day 😉

  • Wow… Those look incredible! I’ve been wanting to try my hand at pickling and maybe it’s about time to!

  • I have never been a fan of pickles, but this just looks oh so yum!!! 🙂

  • I absolutely love making things pickled. I don’t add sugar just because I don’t like sweet to my pickles but use the rest of your recipe to a T. I love to make green beans this way, and I pre-cook baby carrots for about five minutes, cut them in half and add hot peppers to the mix. YUM!

  • Your like a queen of a lady.

My blog is having a Le Spec give away.

  • Wow I didn’t know it was that easy. I’m going to have to try this recipe. Thank you!

  • ohhhh I gots to try this! I love pickles of any sort and I always order pickles like this as overpriced appetizers at restaurants. I knew they couldnt be that hard to make….

  • Thank you for this recipe. I’ve been wanting to make my own pickles and this seems super easy.

  • WOW elsie! Those look absolutely delicious (and so cute in those jars, too!) 🙂

  • Nothing beats my mom’s!
She pickled vegetables in all these delicious spices, it would kill my friends to eat it, but I loved it.

  • It’s sad to say, but I don’t think I have had homemade pickles since I was a kid. Definitely have to try this for my 3 pickle-eatin’ kiddos:)
