Halfway Homemade: Rainbow Pasta Salad

Rainbow Pasta Salad Recipe : www.abeautifulmess.comMmm… pasta salad is one of my favorite potluck foods. It’s perfect for those Sunday afternoon lunches with friends and family. As an added bonus, it’s one of the easiest foods to whip up in just 20 minutes. And it stays good in the fridge for a few days. I found this colorful pasta at a local shop and knew it would make the perfect “halfway homemade” side dish. Here’s the recipe:

Rainbow Pasta Salad Recipe : www.abeautifulmess.com Rainbow Pasta Salad, Serves 6 as a side

8 ounces pasta 
2 cups cherry tomatoes
6 basil leaves, chopped
1 cup black olives
2 tablespoons balsamic vinegar
3 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
pepper to taste

Cook your pasta according to the instructions on your package. In a large bowl, combine the oil, vinegar, Italian seasoning, garlic powder and pepper. Mix with a whisk. Add the pasta, tomatoes, olives and basil to the bowl. Mix well. Chill and serve!

  • ahh looks so good.. a pasta salad with italian dressing is pretty much a staple at every family gathering i’ve ever been to.

  • Yum! I first learned to cook while living overseas in Russia, in the days before the internet, and I remember a tiny Mary Engelbriet book a friend had sent me. It had a few recipes in it, almost like an afterthought, but they were all I had to go on so I still remember each of them.

    The best was a rotini salad, very similar to yours with the only additions being cucumbers, feta cheese and exchanging the vinegar for lemon juice. Still a big favorite all these years later!

    We’ve had a long winter here in Utah, so we welcome BBQ season! Pasta salad is a definite must at any BBQ!
