Halfway Homemade: Rainbow Pasta Salad

Rainbow Pasta Salad Recipe : www.abeautifulmess.comMmm… pasta salad is one of my favorite potluck foods. It’s perfect for those Sunday afternoon lunches with friends and family. As an added bonus, it’s one of the easiest foods to whip up in just 20 minutes. And it stays good in the fridge for a few days. I found this colorful pasta at a local shop and knew it would make the perfect “halfway homemade” side dish. Here’s the recipe:

Rainbow Pasta Salad Recipe : www.abeautifulmess.com Rainbow Pasta Salad, Serves 6 as a side

8 ounces pasta
2 cups cherry tomatoes
6 basil leaves, chopped
1 cup black olives
2 tablespoons balsamic vinegar
3 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
pepper to taste

Cook your pasta according to the instructions on your package. In a large bowl, combine the oil, vinegar, Italian seasoning, garlic powder and pepper. Mix with a whisk. Add the pasta, tomatoes, olives and basil to the bowl. Mix well. Chill and serve!

  • ahh looks so good.. a pasta salad with italian dressing is pretty much a staple at every family gathering i’ve ever been to.

  • Yum! I first learned to cook while living overseas in Russia, in the days before the internet, and I remember a tiny Mary Engelbriet book a friend had sent me. It had a few recipes in it, almost like an afterthought, but they were all I had to go on so I still remember each of them.

The best was a rotini salad, very similar to yours with the only additions being cucumbers, feta cheese and exchanging the vinegar for lemon juice. Still a big favorite all these years later!

  • What a great find on that rainbow pasta! Looks and I am sure tastes good too!

  • Elsie and Emma,

We’ve had a long winter here in Utah, so we welcome BBQ season! Pasta salad is a definite must at any BBQ!

I also wanted to tell you that I was introduced to your website via my cute daughter-in-law since we both love anything vintage and retro! With her help I started my own site dedicated to paying tribute to meaningful parenting since mine were so amazing–and we all feel like we don’t measure up sometimes. Whitney, my daughter-in-law, has been helping make my dream come true on this project, since my generation lacks somewhat in the computer know-how category. She had me read your tutorials as a way to gain a better knowledge base of this whole blog process. Kudos to you both for sharing your experience savvy and for doing it in simple terms–which for me is so needed! I’m a nurse by profession so I think more in terms of caring for others and not promoting myself, but your advice on sharing blog information was most helpful. You’re both darling. Keep up the good work and good luck!

    Sincerely, Mary Wilding

  • I’m usually pretty picky when it comes to pasta salad but this looks amazing!

  • I definately am – you´re always very good at making food look tempting! 🙂

  • The colors make it the perfect spring pot luck food! Olives are the best addition.
I’d love to attend a BBQ party right now.

  • Yum! Looks delicious! This would be perfect to bring to a potluck. I am definitely going to try this after my juice cleanse. Thanks for the recipe!
