I've made a few different kinds of cheesecake before but I wouldn't say that I have a favorite go-to recipe. Until now. Trey loves cheesecake. So overtime I'd like to develop what I consider to be the perfect cheesecake recipe. My mother-in-law has an apple pie recipe that she swears by, and it's her husband's favorite. It's just kind of a cute thing they have. I love it. So I'm on the hunt for my perfect cheesecake recipe.
This one is very, very good. It has a chocolate graham cracker crust. A thick, creamy but not overly sweet cheesecake. And then a sweet strawberry topping. I will definitely be making this again! And in case you're wondering, yes, it is Trey approved. 🙂
Strawberry Cheesecake. Adapted from here.
Crust:
1 cup crushed chocolate graham crackers
1/4 cup melted butter
Cake:
5 (8 oz) packages of cream cheese
1 3/4 cup sugar
2 tablespoons flour
2 teaspoons vanilla extract
5 eggs + 2 egg yolks
1/3 cup milk
1 1/2 teaspoons lemon zest
Topping:
1/3 cup water
1/3 cup sugar
32 ounces fresh strawberriesFor the crust, crush the graham crackers in a food processor or blender. Stir in the melted butter. Then press the crust into the bottom of a greased spring form pan.
For the cake, blend together the softened cream cheese, sugar, flour and vanilla extract until well combined and almost fluffy. Blend in the eggs and yolks with a low setting (if using an electric mixer) until just combined. Stir in the milk and lemon zest. Pour the batter over the prepared crust and bake at 325°F for 1 1/2 hours. Allow to cool for 15-20 minutes before refrigerating.
For the topping, first set aside 15-16 strawberries for the topping. In a pot combine the water, sugar and the remaining strawberries (tops removed) and cook over low heat. Mash the strawberries into a paste and allow to simmer until the liquid has reduced slightly. Remove from heat and allow to cool. Reserve about 1/4 of the liquid.
Spread the strawberry topping over the cheesecake. Press the 15-16 top strawberries into the jam. Now drizzle that reserved liquid over the top of these strawberries so they are all slightly sweetened.Serve cold. Enjoy! xo. Emma

Sounds yummy!
This cheesecake looks so good. I am going to have to make this as strawberry cheesecakes are my favourite. And talking about making a dessert for your partner, I’m going to have to learn to make the perfect coffee and walnut cake.
Mmmm… this looks soo yummy!

i baked it sunday and we all loved it 🙂
oh, this always confuses me. When a recipe calls for “flour” does it mean self-rising flour or regular??
Try this recipe from allrecipes.com. I’ve made it for years, and it always gets loads of compliments. It tastes best after it’s sat in the fridge for a day or two. You can change it up, too, by using chocolate graham crackers instead of regular.

I think trying to master Trey’s favorite dessert is really cute. My fiancé’s favorite is fruit crumble, especially a rhubarb crumble that I make. Every year, he requests it for his birthday instead of cake.
Last week-end, I was saying to my fiancé that I need a cheesecake recipe… That’s a good thing on my to-do list!
Craving strawberries now! This recipe is amazingg!

Looks so delicious! I made one too a few weeks ago and the best compliment ever I could get, was the one of my boyfriend: “Tastes like the cheesecake from my mother!” …puhh, finally:) Here is the recipe… for your german readers 🙂 http://www.lybstes.de/2013/03/24/ich-will-erdbeeren-rhabarber-und-käsekuchen-ich-will-sommer/#permalink

Cheesecake, mumbling on the cheesecake… I love cheesecake! I once tried to make one with strawberries as well, but it didn´t work out at all. Yours looks so much better. 🙂

I have to try this one day! It looks so yummy 😀
Looks super delicious<3!
Definitely making this soon!
Hi Emma! I have a quick tip so your cheesecake doesnt fall in the middle- cook the cheesecake in a water bath! Basically you take the springform pan and line the outside with tin foil. Then you place it in a roasting pan and fill the roasting pan with water to come about halfway up the sides. Then bake. This keeps the temperature regulated and doesn’t expand the edges of your cake too quickly. I also think you are cooking your cheesecake for too long. Try only cooking it for 1 hour and see what happens.
Thanks doll,
The Glamorous Housewife
This looks so delicious, I must try making this sometime in summer!

Mmm yum. My husband is wild about strawberries and cheesecake so I best be trying this recipe! We recently came up with a really yummy strawberry lavender jam (inspired from jam we had at an inn in Georgia) that would go perfectly with smooth & creamy cheesecake!
I’ll let you know how it goes! Xoxo

My husband adores cheesecake, and in the 9 years we have been together I’ve only made 1!
Perhaps I need to try this and win his heart even more?
You really need to try Bobby Flay’s cheesecake recipe – the link is to a caramel apple version but the actual cheesecake recipe my Brother makes for our family and it’s so delicious and has so many different levels to the flavor with the bourbon, vanilla bean, and orange & lemon zest coming through – it’s the best cheesecake I’ve ever had!
Anything with strawberries and I’m in. I was addicted to strawberry cheesecake ice cream fro Thriftys as a kid.

Baked cheesecakes are a relatively new concept to me – my go to cheesecake recipe is a no-bake one with cream cheese. I must post a recipe soon – its divine. This baked one looks pretty fab too.

Food of the gods
Try this easy, no bake recipe:
Either make or buy a crust of your choice. I love using crushed pretzels and butter.
8 oz cream cheese
8 oz sour cream
Dash of vanilla
1 1/2-2 C of sugar
Mix well.
Add 8 oz Cool Whip mix thoroughly
Pour into crust and let sit 2 hours. Or overnight. It gets better over night.
This is my easy go-to. Give it a try!
Cheesecake is my husband’s favorite too! His mom makes him cheesecake every single year for his birthday and I’ve taken on that responsibility while trying to elevate it a bit 😉
I often find cheescake a bit too heavy, but this looks delightful!
http://www.fullbellywornsoles.com/
Mmm.. looks so tasty! I love cheesecake so much. I would eat it daily if that wasn’t a terrible idea for the waistline.. aha.
I need to get a spring form pan so I can make cheese cakes! It has definitely been on my list for awhile!
Alex from www.polkadottedpixels.com
As long as you’re on the hunt, if you haven’t tried Joy of Cooking’s Cheesecake Cockaigne*, I cannot speak highly enough of it. It is a simple recipe that can be easily modified for any flavor that suits your mood, and it is topped with an unusual, but totally mind-blowing sour cream topping, which also conveniently covers any sinking and/or cracking that perfectionists and cheesecake connoisseurs so abhor.
*Cockaigne, a mythical land of pleasure and luxury, denotes each of their all-time-favorite, go-to recipes
Looks perfect!
You’ve now inspired me to come up with a husband-approved lemon tart recipe!
This one looks delicious. I will get kesam instead, because I live in Norway and you cannot buy cream cheese, but kesam will do it! (For those who are from scandinavia!)
Looks great! I’m not a big fan of cheesecake personally (not like I wouldn’t eat one, though..) but my sister LOVES them. I’ll definitely give this recipe a try for her, maybe in mini cheesecake form.
Looks delicious!
So Summer!
This looks sooo good. Gotta try! xx
