Mojitos by the Pitcher

Recipe for a pitcher of mojitos, a refreshing party cocktail.

Ingredients

  • 2 cups white Rum
  • 1 cup lime juice fresh
  • 1 cup simple syrup
  • 1 cup mint leaves fresh
  • 2 cups club soda

Instructions

  • In the bottom of your pitcher, muddle a large handful of mint leaves. Add simple syrup and lime juice and continue muddling the leaves in the liquid. This will release minty essence and flavor.
  • Pour the white rum into your pitcher. Then, refrigerate the pitcher until you are ready to serve.
  • Just before serving, top the pitcher with club soda and more mint leaves and lime slices to garnish. I do not recommend putting ice in your pitcher because it could water down your cocktails. Instead, serve it with ice for each glass.
  • Garnish each glass with a lime slice and mint leaves. Enjoy!!

Notes

  • To maximize your lime juice, choose limes that are soft. If they are hard, it is usually a sign they are dry inside.
  • If you don’t have simple syrup on hand, learn to make simple syrup. It’s super easy and fun to make.
  • Skip putting ice in your pitcher so your cocktail won’t be watered down. Instead, serve it in glasses with ice.
