Elsie and I have a theory that pancakes are almost always best at home. I think it's the pajama effect. Not that you can't wear your PJs to a diner. You could. Maybe your PJs are adorable. Mine… should stay home. So if I want pancakes in my comfy PJs, I'm gonna have to stay in and make them.
Not only are these banana nut pancakes (think fluffy banana bread), they also have layers of deliciousness in between. You'll see. First let's talk batter.
Banana Nut Pancakes, makes 10 medium-sized pancakes
1 cup flour
3/4 teaspoon baking soda
1 1/2 tablespoons brown sugar
1/4 teaspoon salt
1 egg
1 1/2 cups buttermilk
1/3 cup water
1/3 cup toasted walnuts
1-2 ripe bananasIn a bowl whisk together the flour, baking soda, sugar and salt. Then stir in the egg, buttermilk and water until nearly no lumps remain. Stir in the toasted walnuts.
Heat a pan over medium heat with a couple tablespoons butter or oil. I like to use oil to get that crispy pancake edge. Once your pan is heated pour in about 1/4-cup of the batter. Quickly lay 3-4 slices of banana into the batter. Let the pancake cook until it begins to bubble about 2-3 minutes. Then flip and continue cooking, until it's cooked through (another minute or two).You can serve these warm with butter and maple syrup. Or you can get fancy:
Add a layer of peanut butter. Yum! Bananas and peanut butter and meant to be.
Add a layer of Nutella. Boom. Nutella on pancakes is divine.

The pancakes taste great! Especially when layered with chocolate and peanut spread in between ♡ Just a tip when using gluten free flours: you might wanna add more of it, otherwise you’ll have a really wet batter 🙂

My husband doesn’t care for them but I love almond flour pancakes. They are sweet and slightly crunchy and super yummy even without any toppings.

Whoops, didn’t quite read the directions carefully enough, mashed the bananas first, and added them in. Banana bread pancakes instead, still a winner!
