Tropical-flavored drinks are kind of one of those things that you either love or hate, but I am firmly in the “love” category … especially if there’s a beach under my chair and a plate of chips and guac nearby, amiright?!?
Pina Coladas always make me think of being on our honeymoon in Mexico and the cool, sweet, fruity flavor is a classic summer cocktail.
Rather than buy a jug of mix from the store, you can make your own fresh version to throw in the blender with some rum (or enjoy as a virgin option!) and let the flavors transport you to somewhere sunny …
For this recipe, you’ll want cream of coconut, which you can find canned and usually in the baking or “world food” section of your grocery store (mine was kind of in with the Thai section of items).
You can stick to one kind of rum for this recipe if you don’t have dark and light rum, but most recipes highly suggest both as the layers of flavors really add to the depth of the overall drink.
How delicious does that look!? You can serve these in a traditional hurricane glass if you’d like, but I love this pitcher and rocks glasses set for mine.
Store your mix in an airtight container for 2-3 days to pull out as needed, or you can go straight to the delicious part and make a batch right then.
I made a virgin one for my toddler and she loved it, so I think it will be easy to make some of these that the whole family can enjoy this summer. Don’t forget the umbrella! xo. Laura

Ingredients
Pina Colada Mix
- 1 cup cream of coconut (coco lopez brand is a classic)
- ¾ cup pineapple juice
- 3 tablespoons lime juice (about 3 limes)
Add later
- 4 ounces white rum
- 4 ounces dark rum
- 3 cups ice
- 1 ½ cup pineapple (frozen)
Equipment
- Blender
Instructions
- Juice your limes and add to blender.
- Add your cream of coconut and pineapple juice and blend on medium speed until creamy.
- Either store in airtight container in fridge for 2-3 days or add the rest of the ingredients to the blender to complete your drinks.
